So I managed to get it to work via a simple exploit (can’t believe it worked!)
Since Swisscom is now officially supported in Switzerland, get a plain prepaid eSIM from Swisscom and register it on your phone.
Set Swisscom eSIM as your main network
Go to the watch app -> mobile network and there you should see “Connect to Swisscom” option. Press -> scan QR Code
Leave the setup camera open and then switch to your main eSIM (Galaxus Mobile, Sunrise…) and scan a Multi eSIM QR Code (mine was 5.- on Galaxus Mobile).
And there you go!! LTE on the watch is working fully with my main number
I deactivated the Swisscom eSIM after that.

I’d like to ask if the newly released Google Pixel Watch 3 LTE will be supported on the Sunrise network in the future? So far it only seems to work on Swisscom.
